Greek Salad, A Summer Favorite!

This is one of my favorite go to salads in the summer!  I love using the tomatoes, onions, and cucumbers from my garden.  It is so fresh and light, truly a wonderful way to eat all year round, but during the summer the flavors are at their peak!  I love to eat it with chicken, grilled simply with a little bit of olive oil, sea salt, and freshly ground pepper.

Serves 3 to 4 people

Ingredients:

5 to 6 small tomatoes, medium diced (you can use halved cherry or grape tomatoes)

1/2 to 3/4 of an english cucumber, medium diced (you can use a regular cucumber as well)

1/2 of a red onion, thinly sliced

1/4 to 3/4 cup of pitted olives, halved (use your favorite)

1 handful of fresh mint, chopped

1 handful of fresh oregano, chopped

1/4 cup of crumbled feta cheese (add more if you prefer)

Small squeeze of lime juice (optional)

Salt and freshly ground pepper to taste

 

Combine all ingredients in a medium bowl, mix well.  Let sit for a little bit to let the flavors meld together.  Serve and enjoy!
