A summertime favorite of mine is grilled vegetables. There is nothing more delicious than simply grilling in season vegetables. This is a platter of springtime’s bounty, which I wait all year for. It includes ramps, fiddleheads, asparagus, and pole beans.
Any in season vegetables that you love
A good olive oil
Sea salt and freshly ground pepper to taste
Crumbled feta cheese, optional, but amazing.
Slivered almonds, optional, but adds a bit of texture
Toss the vegetables with a drizzle or two of olive oil. Season with sea salt and pepper, set aside.
Heat your grill or grill pan until hot.
Add the vegetables and grill, being careful to turn frequently, until they are charred to your liking, seasoning with another round of sea salt and pepper as you go.
Transfer to a platter, sprinkle with the crumbled feta and almonds, if using, and serve.
Note: I can eat the whole platter!
