Granola….Simple, Healing, and Versatile!

I discovered this granola recipe in the cookbook, Eat Clean, Live Well by Terry Waters.  It has become a staple in my pantry.  It is great for snacking and the wonderful cinnamon flavor is amazing.  With milk, it has become my new breakfast cereal!  Loaded with nuts!  I add whatever dried fruit I have on hand to add just a little bit of extra goodness.

Makes  9 1/2 cups


4   cups rolled oats

1 1/2   cups unsweetened coconut flakes

1   cup sliced almonds

1   cup chopped walnuts

1   cup chopped pecans

1   cup sunflower seeds

1   Tablespoon Vietnamese cinnamon

1/8   teaspoon ground cloves

1/2   cup melted virgin coconut oil

1/2   cup maple syrup

1   teaspoon pure almond extract

1   cup dried fruit, I love using cranberries (optional)

  • In a large bowl, mix together all of the dry ingredients, except the dried fruit, if using
  • In a separate bowl, whisk together the coconut oil, maple syrup, and almond extract
  • Pour wet mixture over dry ingredients and stir to evenly coat
  • Spread evenly on a large sheet pan
  • Bake in the oven at 350 degrees until golden brown and dry, stirring often to bake evenly
  • When granola has cooled completely, stir in dried fruit, if using.  Place in an airtight container and enjoy!
