Potatoes, I love them! Especially small gourmet ones. Red, yukon, purple, you name it, I love them and any of them can be used in this recipe. I just so happened to have red ones on hand. Having a busy work schedule, often getting home late, a quick meal is always best. This recipes takes about 20 minutes at most, 10, if the potatoes are already parboiled. I’ll have these followed with a big, beautiful salad and call it a night. Quick, simple and delicious!
Recipe is for 1 serving. Adjust to your needs. It is more about the concept and combination than the actual ingredient amounts.
4 to 5 small gourmet potatoes, depending upon their size, cut into small cubes.
A splash of olive oil
1 slice bacon, cut into small pieces
1 clove garlic, finely chopped
A small bunch of fresh chives, finely chopped or any fresh herb that you love and have on hand.
Sea salt and freshly ground pepper to taste
A dollop of yogurt or sour cream for serving.
Parboil potatoes in salted water until just soft, about 5 to 10 minutes depending upon the size. You do not want the potatoes to be overcooked or they will fall apart. Drain in a colander and set aside.
In a frying pan, on medium heat, cook your bacon and when just about done, add the garlic and saute for another 30 seconds.
Add the drained potatoes, coating them with the bacon, drippings, and garlic. At this point add a splash of olive oil if needed.
Cook for a few minutes until the potatoes are golden in color. Season with sea salt and freshly ground pepper. Right before serving sprinkle with the fresh chives and a dollop of plain yogurt or sour cream.
