Fried Zucchini Blossoms

What happens when you have a ton of zucchini blooms and only one actual zucchini grows?  If you are this girl, you fry them up and make a fabulous appetizer out of them. Fried zucchini blooms are incredible.  They are great fried plain,, served with a little parmesan cheese or a yogurt dip, but they can also be stuffed with cream cheese before frying which is also amazing.  I did a plain fry and could not have been happier.  It is so much fun to step into the garden and find the perfect treat!  Enjoy!

Ingredients:

Zucchini Blossoms (be careful, check for bees, it is a perfect hiding place)

1   egg

1/2   cup cornstarch (you can use flour if you prefer. I like the lightness of the cornstarch)

Coconut Oil for frying (you can use a vegetable oil if you prefer)

Sea Salt and Freshly Ground Pepper

 

Preparing:

Beat the egg with a drop or two of water, making an egg wash.

Take your zucchini blooms and dip both sides in the egg wash and then dredge both sides lightly in the cornstarch, shaking off any excess.

Salt and pepper the blooms.

Heat the oil in a fry pan and add the blooms. Fry until golden brown.

Let drain on a paper towel or paper bag before serving!

Note:  I ate mine straight away with just a little bit of parmesan cheese sprinkled on top.  A yogurt dip is always good if you wanted something a bit more.
