Lavender is one of the most well known and most loved herbs for its scent, flavor, spiritualism and healing benefits. There is something so magical about brushing up against a lavender bush while walking up a path or in a garden. That beautiful smell is just so intoxicating and delightful, an awakening for the senses and quite calming as well. Lavender’s origin is believed to be from the Mediterranean, Middle East, and India. Known and used for over 2000 years, it is a flowering plant and a member of the mint family. I use lavender in cookies, cakes, and frostings. Steeping it in a cup of hot water and pouring over ice is a favorite of mine, very refreshing and light. Pairing it with honey and serving over cheese is amazing along with adding a bit to a salad or dressing. Chocolate and lavender make a dynamic duo as does pairing it with chicken and fish. Spiritually speaking, lavender is a powerhouse in the herb world. Known for healing, tranquility, easing of tension, clearing of energy blocks, and a higher consciousness, no kitchen should be without a supply of this magnificent herb.
