Nachos, A Great Appetizer!

My weekends start late on Saturday afternoons.  I look forward to the evening, which usually promises a bottle of wine, music and lots of cooking!  I am a girl who likes to stay home and hang with her puppies by the fire.  Nachos are always somewhere in the equation.  So simple and easy to make, I love them when I am by myself or when I have company.  They are great for taking to a party too!  Just prep before you go and throw them in the oven when you arrive, simple!  The only special equipment needed is a cast iron pan, for me, the bigger the better.


1   bag of your favorite tortilla chips

A shredded Mexican cheese blend

Grape tomatoes, diced

Scallions, white and green parts, sliced thin

Olives, pitted and sliced thin

A small red onion, very thinly sliced

A small bunch of cilantro, roughly chopped (optional)



I layer my nachos so that you have a bit of everything in every bite.

Sprinkle the bottom of your cast iron pan with a layer of the shredded cheese.  By doing this you are creating a fabulous cheese base.

Spread a layer of chips topped with a layer of your tomatoes, scallions, olives, red onion, and cheese.

Do a second layer of chips topped with another layer of your tomatoes, scallions, olives, red onion, and cheese.

Top with the chopped cilantro, if using, and bake at 450 degrees for about 15 minutes or until cheese is nicely browned and melted.

Serve with salsa or guacamole and sour cream.
