Wedding Cake Choice #1 The Sweet Romance Cake

The first of the three final choices for Guy and Angela’s wedding cake is one of my favorites, Sweet Romance with Strawberry Jam & A Rose Almond Buttercream Frosting. When the kids originally picked this cake as a contender I think they were just going by my description, but tasting it was a whole different story.  It is a cake that is so full of love and joy that it is amazing.  To explain what happens when I bake these cakes you would think that I was a little crazy, but when you bake with your heart for people that you love, miracles happen.  Please enjoy the recipe and put some dulce romance into your baking.



For The Cake:

2 1/2   cups flour, sifted

1   cup sugar

1   teaspoon salt

1   Tablespoon plus 1 teaspoon baking powder

3/4  cup unsalted butter, softened

3   eggs

1/3   cup rose water

1   cup sour cream

1   teaspoon pure vanilla extract

1   teaspoon pure almond extract

For The Frosting:

1   cup butter, softened

4   cups confectioner’s sugar

2 – 3   Tablespoons milk

1/2 to 1  teaspoons pure almond extract

1 to 3  teaspoons rose water

For The Cake:

1.   Grease and flour two 8″ cake pans

2.   Combine flour, salt, sugar, and baking powder in a bowl and set aside.

3.   Cream remaining ingredients together in the bowl of an electric mixer.

4.   Add flour mixture and mix well.

5.   Divide the batter evenly between the cake pans and bake at 325 degrees for 30 minutes or until a cake tester or knife comes out clean when inserted.

6.   Remove from oven and let cool slightly before turning out onto a cooling rack.

7.   Cool completely before frosting.


For The Frosting:

1.   Cream together butter and confectioner’s sugar.

2.   Add milk one Tablespoon at a time until desired consistency.

3.   Add almond extract and rose water to taste, mixing until well combined.  (I have found that beating the frosting for several minutes makes it very light and easy to spread)

4.   Spread a layer of strawberry jam and frosting before stacking the two cakes and frosting.

5.   Enjoy a slice of “Sweet Romance”.
