I love pancakes and make them most every Sunday. The recipe is so simple and delicious, that I have been using it for almost 20 years. It is an original recipe from The Joy of Cooking cookbook. It just works and I love how it allows for substitutions. I often exchange gluten free flours for the regular flour, I’ve used buttermilk instead of regular milk, maple syrup instead of sugar, and regular butter instead of unsalted. It is simply an amazing recipe! Enjoy!
Servings: Makes about 12 small pancakes
1 1/2 cups of flour
3 Tablespoons sugar
1 1/2 Teaspoons baking powder
1/2 Teaspoon salt
3 Tablespoons unsalted butter, melted
1 1/2 Cups milk
1. Combine dry ingredients in a medium bowl.
2. Combine wet ingredients in a small bowl, making sure to stir well.
3. Add wet ingredients to dry ingredients and mix well!
4. Heat your griddle and you’re ready!
