Funfetti Cake With A Slightly Chocolate Buttercream Frosting

A cake requested by the bride!

A recipe by Molly Yeh with a few things adjusted, but only slightly.

As the mother of the groom, this cake journey has been a great gift to me.  It has been a fun way to share my excitement with the kids.  This cake was actually requested by the bride, so of course, I had to make it.  Lots of lessons are learned every time that I bake and frost a cake.  This week was no exception.  Patience, having all of the ingredients, not wrapping your cakes in stretch wrap before they are cooled, and making sure that the butter is at room temperature before making the frosting, are just 4 examples.  Thank goodness that I didn’t have to remake the cakes like I did last week.  I love this recipe and the cake and frosting were wonderful!  Happy Baking!



For The Cake:

1   cup (2 sticks) unsalted butter, room temperature

1 1/2   cups sugar

4   large egg whites

2   Tablespoons pure vanilla extract

6   Tablespoons vegetable oil (I used walnut oil)

2 1/2  cups cake flour

2 1/4   teaspoons baking powder

3/4   teaspoon salt

1   cup whole milk

2/3  cups sprinkles (I used rainbow jimmies, but use whatever you love)


For The Frosting:

2   cups (4 sticks) unsalted butter, room temperature

3   cups confectioner’s sugar

2   teaspoons pure vanilla extract

1   pinch salt

2 to 3   Tablespoons whole milk

3 to 4   Tablespoons cocoa powder



For The Cake:

1.   Grease and four two 8″ cake pans.

2.   In a bowl, combine flour, baking powder, salt, and set aside.

3.   Cream together butter and sugar.

4.   Add eggs whites, vanilla extract, and oil, mixing well.

5.   Add milk and dry ingredients, alternating each, until combined.

6.   Fold in sprinkles.

7.   Divide batter between the two pans and bake at 350 degrees, starting to check at 25 minutes.

8.   Remove from oven and let cool for a bit.  Turn out onto a cooling rack.  Let cool completely before frosting.


Preparing The Frosting:

1.   Combine the butter and confectioner’s sugar.

2.   Add vanilla and salt.

3.   Add desired amount of cocoa powder.

4.   Add milk one tablespoon at a time until desired consistency.

5.   Frost cake and enjoy a slice.
